
This is one of my favorite recipes. I’ve made this so many times and it’s always a 🙂. The cucumbers are crunchy, sweet and slightly acidic from the vinegar. I don’t really like dill as an herb but it works sooo well in this dish. I like to have this ready to take on a picnic in summer since it’s super refreshing. It’s also great as a cooling side dish with any spicy Asian food. The key in this recipe is that the marinade uses dry cider and it just makes the dish.
I bought these cucumbers from a farmer’s market and the dry cider and dill from Trader Joe’s. It does take 3 hours to make this recipe but it’s totally worth the wait. The cucumbers stay crunchy since you pull out water for an hour and you drain the marinade after it’s marinated in sugar, dry cider and vinegar for two hours.
