I really liked the daikon radish in this dish. This salad is from Italy according to the cookbook. You layer daikon radish, shaved carrot, shaved red radish with avocado slices. You top it with pickled onion and an oil and lemon juice herby sauce. I plan to use this tomorrow to make a hummus and veggies sandwich similar to Panera Bread’s Mediterranean Veggie Sandwich
Update: I downgraded this to ☹️
The leftovers were not good. Disappointing
