We’re currently experiencing lots of frozen rain and ice in VA so a big bowl of salty beans is super comforting right now. I had a bag of Great Northern beans in my pantry and wanted to try a recipe from a new cookbook my sister sent me. The beans were cooked with salt pork and was almost on the cusp of being too salty but thankfully weren’t. I’m a big bean fan. I love every bean. I get that from my mom. My main issue was that the recipe said it would take 50 to 60 minutes to simmer unsoaked beans….nah, it takes closer to 90-100 minutes. Just top these beans onto rice and add hot sauce and it’s…chef kiss!
