Hello Again!

Hi everyone! I took a bit of a break, but I’m back!

I left my approach of cooking from different cultures, because it wasn’t the best approach economically for me at this time.

But! I found out of a grocery delivery service that can save me $$$ and help with meal planning. It’s called Imperfect Foods. I found out from looking at money saving resources from Her First $100K. My first delivery comes today and I’m beyond excited.

Here’s what’s coming in my first delivery:

1 English Cucumber
1 lb Sweet Potato
1 Broccoli Crown
1 lb Roma Tomatoes
1 lb Carrots
1 pack Crimini Mushrooms
1 lb Yellow Onion
2 Navel Oranges
2 Pears
3 Apples
1 Mango
Impossible Burger Ground Beef- 12oz
Petit Pot Organic Plant-Based Dark Chocolate Pudding- 2
Blue Corn Tortilla Chips
Tri-Color Quinoa
Elbow Pasta
Plant-Based Breakfast Patties- 6
Large Free-Range Brown Eggs- 12
Boneless Skinless Chicken Breast- 14oz
Spring Mix- 1 bag
Gruyere Cheese- 6oz

So with this delivery I’m planning to cook all the ingredients, make breakfast and lunches for myself and dinners for myself and my boyfriend. I only spent $47.11 on this delivery, which is a far cry from my usual cost of $100.

I have a feeling I may have underestimated and may have to buy a couple of things, but I don’t expect to spend more than $20. I’m so excited for the savings and to see what the delivery looks like.

Here are the meals planned this week with the ingredients used:

My breakfast (Breakfast patties, 1 egg, serving of fruit). I may bake bread this weekend with ingredients I have on hand.

Lunch will be leftovers.

Snacks: Tortilla Chips with Mango Salsa (Mango, Cucumber)

Dinners: American Goulash (Elbow Pasta, Impossible Burger, Onion, Roma Tomatoes)

Ginger Chicken, Broccoli and Mushroom Stir-Fry (Chicken, Broccoli, Mushrooms)

Salmon or Branzino (I have both in my freezer) with Roasted Root Vegetables and Quinoa (Sweet Potato, Carrot, Quinoa)

The pudding will be a special treat throughout the week.

For the Spring Mix, I’ll top with any leftover veggies and make a side salad with dinner.

Whatever fruit is left at the end of the week, I’ll turn into smoothies.

I’ll report back with how the delivery turned out, the nutritional information of the items and post photos of dishes!
