Snack Week 1A: Parmesan Pecans


Nonstick cooking spray

1/2 c. grated Parmesan cheese

1 tsp. dried parsley

1/2 tsp. dry Italian herbs

1/2 tsp. garlic salt

dash cayenne pepper

1 egg white

2 c. pecan halves

  • Preheat oven to 250 F. Grease large baking sheet with spray.
  • Mix cheese, herbs, garlic salt and cayenne in bowl. Beat egg white until frothy. Add pecans to egg white, tossing to coat. Add pecans to cheese mixture and toss to coat. Spread in a single layer on the prepared baking sheet and bake for 30 minutes, stirring occasionally.

This is such a fulfilling snack. I grabbed a handful for snack every day this week.
