Cajun Beans and Couscous

🙂. Yum! This is a night and light lunch (or dinner) that is super easy to make and take to work. I added the rest of the Steam-Fried Zucchini Halves for some extra veggies and to use the leftovers. I also added a nice heap of spicy salsa for extra flavor. I deviated from the original recipe since this was supposed to be Red Kidney Beans, but even though I’ve been stockpiling beans for months, I didn’t have any so I used Black Beans instead. I feel like to make this a complete entree, it needs a protein, but I really enjoyed this meal at work, especially for only 300 calories!
