This has to be one of my favorite dishes that I’ve cooked in awhile. The roasted red peppers were nice and sweet. I loved the roasted onions. Also, I love the way egg yolk congeals when eggs are baked. The white gets cooked and the yolk becomes a gelatinous state halfway between liquid and solid. My boyfriend agreed that this had to be one of the best dishes that he has tried for breakfast in a long time. It did take some time to make, I thought about roasting the onions and peppers the night before and then baking the galette in the morning. I’m glad I didn’t since I feel like the peppers would have gotten too soft left in the fridge overnight. We enjoyed these with orange juice and hot espresso.
