Me- 🙂Boyfriend- ☹️ I really liked the daikon radish in this dish. This salad is from Italy according to the cookbook. You layer daikon radish, shaved carrot, shaved red radish with avocado slices. You top it with pickled onion and an oil and lemon juice herby sauce. I plan to use this tomorrow to make…

Basic Green Salad
Me- 😕 The recipe called for just greens, olive oil and vinegar with a garlic clove rubbed into a bowl. I omitted the garlic clove. I used Champagne vinegar and Romaine lettuce and added marinated tomatoes and Parmesan cheese. Nothing super impressive. Just literally a basic salad. https://www.penguinrandomhouse.com/books/677623/the-complete-mediterranean-cookbook-gift-edition-by-americas-test-kitchen/
Spinach, Scallop and Quinoa Salad with Orange-Poppyseed Dressing
Yum! I loved this.Me- 🙂Boyfriend- 😕 We both loved the scallops and the dressing. Thankfully the dressing stays for about a month in the fridge so I’m looking forward to using it again. While the quinoa was good, it didn’t feel like it had enough carbs to keep me satiated, as I will probably have…
Shrimp Salad with Creamy Mint Dressing
The original recipe called for the dressing to be a Creamy Dill Dressing, but I’m not a super big fan of dill so used mint instead. Other than that, I pretty much kept the recipe the same. I would recommend including some sort of carb along with the salad, since I don’t feel like I…
Buffalo Chicken Salad and Sparkling Pink Lemonade
We had a smiley face night. We gave both recipes a nice big 🙂 I thought that Pink Lemonade was pretty sweet at first but it grew on me. I was happy to find the frozen pink lemonade concentrate at Wegmans. Since this punch makes such a big bowl of punch, I couldn’t mix it…
Shallot-Thyme Vinaigrette
I’ve made this vinaigrette before. It’s oily, acidic and the shallots almost taste like pickled onions. It’s so good. I used the vinaigrette and made myself a dinner salad with Spring Mix, goat cheese, avocado, pepperoni and dried cranberries. So yummy
Baby Spinach Salad with Dates and Almonds
This is a lovely salad to have as a lunch. My favorite part of this salad wasn’t even included in the title. I enjoyed the pita fried in butter and oil that were later coated in sumac to create delicious middle eastern croutons. This salad could be great as a side salad, or dressed up…
Na’ama’s Fattoush
I enjoyed several soup and salad/ salad and sandwich combos this week. Fattoush is an Arabic salad many sources say that it originates in Northern Lebanon. I’ve had fattoush before but this one I really enjoyed since it was herby, acidic, vegetable driven but the naan with homemade buttermilk gave the mouthfeel and taste of…
