Mango, Pineapple and Grape Cocktail

I’m trying recipes that I’ve made years ago from a cookbook that I absolutely love. What a stinker of a recipe to start with though. It was way too sweet. Now, I may not be the best judge of fruit recipes since I pretty much have to force myself to eat fruit. Although, my boyfriend, who is a better fruit eater than I am, agreed that the juice made the fruit too sweet.

This recipe has 5 ingredients- the three fruits mentioned in the title (I used cantaloupe as the melon), white grape fruit juice and mint. I let the fruit marinade for 2 days and the juice made all the fruit way too sweet. I was also supposed to make melon balls but I was feeling lazy so I simply chopped the cantaloupe. The pineapple was canned pineapple that I had already picked up from Trader Joe’s, honestly the pineapple was pretty disappointing. I should have gotten a fresh one instead.

In other news, I’m teaching a cooking class tomorrow on fish and I’m possibly featuring a recipe that I included in this blog!
