Pistachio and Mascarpone Pie

I made this pie to take to work. I thought this recipe was super tasty. The only thing I changed was using pistachio milk instead of whole milk. I already had the pistachio milk on hand and I thought it added an extra nutty taste throughout the pie. The only thing is the the pistachio milk added a tint to the pie, not photographed, so it wasn’t as white as on the creator’s website. My main critique is that the pie filling made way more than the pie crust could handle, so I ended up wasting a bit of ingredients. That being said, this pie received lots of compliments at work.
