Although I was out of parsley so technically this recipe is French Lentils with Carrots. I love lentils, but I don’t really crave them. I feel like I would have enjoyed this dish more in the fall as a filling side dish. This would be so good with Herb Roasted Chicken and crusty bread. I may have to try that later in the fall. This was my first time cooking French lentils, I like that they hold their shape. The recipe called for Lentilles du Puy, but I think I found the same Lentils called French Green Lentils at Wegmans.
