
Yum, yum, yum. I love frittata’s and this one was more filling than I had anticipated. Frittata’s are wonderful breakfasts for me since I don’t always have time to cook in the morning and I’m not a fan of cereal. This one includes zucchini, tomatoes, mozzarella cheese, and walnuts. I thought the walnuts were out of place, but they ended up being one of my favorite parts. The nutty taste and the meatiness of the nut really added to the flavor of this egg dish. I topped my slice with fresh black pepper and basil. The entire dish fed me for four days.
