Week of April 2

I’m going to attempt 75 Hard and my diet of choice is the Mediterranean Diet. I’m just not going to enjoy any red wine for 75 days. My shopping list is pretty long this week but I’m hoping it won’t cost too much since it’s mostly vegetables with some seafood

Sundaynoms
Roasted Chili-Lime Cod

Breakfast
Zucchini and Tomato Frittata with Fruit
Almond and Date Smoothie with Fruit

Lunch
Shrimp Salad with Creamy Dill Mint (I don’t do dill) Dressing

Dinner
Spinach, Scallop and Quinoa Salad with Orange- Poppy Seed Dressing
Mediterranean – Twist Salmon

Snack
Hummus with Veggies or Crackers
