

We had a smiley face night. We gave both recipes a nice big 🙂
I thought that Pink Lemonade was pretty sweet at first but it grew on me. I was happy to find the frozen pink lemonade concentrate at Wegmans. Since this punch makes such a big bowl of punch, I couldn’t mix it all even in my large pitcher. So I mixed the pink lemonade concentrate (both of them) with the pineapple juice and almost all of the 2L of ginger ale. The Hawaiian Punch I just keep separate and add a shot when fixing up the drink. Original recipe found here.
I made some slight adjustments to the Buffalo Chicken Salad. I used Spring Mix instead of Romaine lettuce. We’re big Spring Mix fans in this house. I left off the jalapeño. I boiled some chicken and tossed it in a mixture of Sweet Baby Ray’s Buffalo Wing Sauce and Chick-fi-A’s Buffalo Sauce. The original recipe called for adding butter or ghee with the sauce and chicken, but I didn’t think that was necessary. We added croutons and ranch dressing instead of olive oil and lime, so I guess our version wasn’t quite Whole30. We ate the entire bowl. Yum!
