Fettuccini with Shrimp and Mushrooms

Recipe as follows:
1lb fettuccini
8 oz mushrooms
Handful of shrimp
1 onion, diced
2 cloves of garlic or some garlic powder
2/3c stock
2T Sauvignon Blanc
1T Lite Soy Sauce
2t Tomato paste
Salt and Pepper
Handful of Parsley
Parmesan (not pictured but generously added)

The original recipe calls for tagliatelle but I couldn’t find any at my local Lidl so I used fettuccine instead. Also, I added shrimp for extra protein.

1. Boil pasta to the box instructions or to however your so wants the noodles cooked
2. Put a pan on medium and simmer with garlic and the stock with a lid on for about five minutes
3. Add the wine, soy sauce, tomato paste and mushrooms, cover and simmer for about five more minutes.
4. Remove the lid, add the shrimp and cook until the shrimp are cooked and pink and add the cooked and drained pasta once the stock has reduced.
5. Throw in the parsley and serve with Parmesan.
