Prosciutto Egg Cups

I think I’ve come to realize that I just don’t like cooked prosciutto. I enjoy prosciutto more in its natural state with some cheese and a cold glass of Prosecco. Other than that, these egg cups were super tasty. I think I would have enjoyed them more if the cup was of another food like some kind of pastry. I’ve made egg cups with bacon before, alas I’m not eating bacon anymore and that’s not part of the Mediterranean Diet. Cooking the eggs in the oven on 350 for 20 minutes led to a cooked yolk, although I would have been happier with a minute or two less. These 2 cups were pretty filling and a great way to start the day. I enjoyed mine with a cup of green tea.
