
I made this this past Sunday instead of the Greek marinated chicken as originally planned. We postponed the chicken until my boyfriend’s new work schedule starts so he can be the grill master.

This one by far, one of the best dishes that I’ve made in a long time. I loved the sauce that went on top of the salmon. It was like a vinegary, basil-y tomato chutney that was so delicious on top of the salmon. Despite the disappointing cuts of salmon from Trader Joe’s, I was able to cook the salmon perfectly that shone with the sauce. The Veggie Bulgar Salad was very similar to tabbouleh, and was delicious along with the salmon and the sauce. I’ve enjoyed eating leftovers of the bulgar salad all week by pairing it with spinach or arugula and topped with peppers, dolmas, marinated tomatoes and hummus with leftover Orange Poppyseed dressing from the scallop salad. I’ve been eating that and loving it instead of prepping the zucchini salad originally planned.
