Crab Cakes with Celery Root Mash and Green Beans

Eh. I was pretty disappointed with the celery root mash. The directions called to cook the celery root in the microwave for 8 minutes. I kept testing and wasn’t exactly happy with the texture. I ended up cooking the celery root for a combined total of 12 minutes, until I just gave up. I think it would have been better to simply boil the root on the stovetop.

Green beans. I like to sauté mine in olive oil with garlic powder, salt and pepper. Tonight, since I was already microwaving a vegetable, I tried to microwave them a bit before sautéing them a bit. I think that ended up making them a bit oily, oops.

Now the crab cakes. We’re big Wegman’s crab cakes fans in this house. You can’t go wrong. I typically bake them, so it’s easy to focus on sides. I’ve made them from scratch before and frankly I didn’t make them as good and they’re messy. So I’m happy to keep buying Wegman’s crab cakes occasionally rather than making them. That’s one of the few items that I feel that way about.
