Sole Almondine and Mashed Purple Potatoes

My dad sent me a shipment of Omaha Steaks seafood for Christmas and so far I’ve been pleasantly surprised. I was really excited for the sole entrees since I don’t see sole in grocery stores around here. I’ve cooked these both in the oven and the air fryer and I’m a fan. The breading isn’t too heavy and the fish has a pleasant flavor. My boyfriend thought the fish was good with ginger ale.

The recipe for Mashed Purple Potatoes had called for an entire head of roasting garlic. I didn’t put the entire head in since I didn’t want to overwhelm the potatoes. Honestly, it needs the whole head. The purple potatoes aren’t super flavorful on their own and we kept adding seasoning to them. On top of mine, I created a quick compound butter with a clove of the roasted garlic and I’m so glad that I did. Purple potatoes need all the help.
